When you think "high-protein," cake may not be the first thing that comes to mind. But this rich and creamy high-protein banana cake recipe is so good, you won't even know it packs a protein punch.
I try to include healthy sources of protein in many of my recipes – including this easy dessert recipe. This creamy delicious banana cake tastes a bit like cheesecake, and it contains my favorite secret ingredients for added protein: Greek yogurt and cottage cheese. Check out the health benefits of Greek yogurt and the health benefits of cottage cheese. Plus, it includes bananas for added nutrition.
To make this moist banana cake recipe, here are the seven wholesome ingredients you'll need: cottage cheese, eggs, plain Greek yogurt, pure maple syrup, vanilla extract, flour and overripe bananas. You whip the cottage cheese with the eggs in a blender, combine all the ingredients in a mixing bowl then bake them up in a cake pan until cooked through and golden brown. You can top the cake with vanilla icing, but that's optional.
This rich and creamy banana cake is a perfect dessert served with a cup of coffee or tea. It also can provide an energizing boost of protein when you need a nutritious snack throughout the day. So easy to make, too!
Cuisine: American
Prep Time: 10 minutes
Cook Time: 30 to 40 minutes (ovens vary)
Total Time: 40 to 50 minutes
Servings: 8
Ingredients
- 1 cup low-fat cottage cheese
- 6 large eggs
- 1 cup low-fat plain Greek yogurt
- 1/2 cup pure maple syrup
- 2 teaspoons vanilla extract
- 2 medium overripe bananas, mashed
- 1/2 cup flour (all-purpose or gluten-free flour)
Click here to check out the recipe for the optional vanilla icing (three ingredients, three minutes to make).
Here's how to make it:
- Place the eggs and cottage cheese in a blender and whip until smooth, about 30 seconds.
- Pour the cottage cheese mixture into a large mixing bowl.
- Add the Greek yogurt, maple syrup, vanilla, bananas and flour. Whisk to combine. (If you'd like the cake to be a bit sweeter, you can add a bit more maple syrup. Or, you can top it with the optional vanilla icing, or both. You can use your flour of choice, but to ensure this recipe is gluten-free, use gluten-free flour. I used GF 1:1 flour.)
- Pour the mixture into a cake pan that's been lined with parchment paper.
- Bake in a preheated 350-degree F oven for 30 to 40 minutes, or until cooked through and golden. Allow to cool before slicing and serving.
- If using the optional vanilla icing, allow cake to cool completely before frosting and garnishing.
- Serve. You can garnish this cake with sliced bananas, if desired, or whipped cream and sliced almonds (or a combination). Store the cake covered in the fridge.
