Banana bread addicts, I have good news for you. You can make a healthier version of comforting banana bread that tastes amazing! This high-protein banana bread recipe is nutritious and delicious, and a wonderful comfort food, too.
This tasty banana bread recipe incorporates the health benefits of cottage cheese, which is one of my favorite sources of healthy protein. Then there are the bananas, dark chocolate and walnuts, which have antioxidants and healthy omega-3 fatty acids, among the other health benefits of walnuts.
To make this delicious bread recipe, you'll need the following ingredients: eggs, cottage cheese, bananas, flour, baking powder, salt, cinnamon, vanilla extract, brown sugar, dark chocolate chips and chopped walnuts. You whip the cottage cheese with the eggs in a blender. Next, you make the batter then bake the loaf until it's cooked through and golden. Yummy!
Serve this nutritious and delicious bread recipe for breakfast or for brunch, as a slightly sweet snack or even for dessert. It's even more delicious when warmed in the oven!

Ingredients
- 3 eggs
- 1 cup low-fat cottage cheese
- 3 medium overripe bananas, mashed
- 1 1/2 cups flour (all-purpose or gluten-free flour)
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 teaspoon cinnamon
- 1/3 cup light brown sugar
- 1 1/2 teaspoons vanilla extract
- 3/4 cup dark chocolate chips
- 3/4 cup chopped walnuts
Recipe Notes
- You can use all-purpose flour or gluten-free flour. I used GF 1:1 flour.
- I used dark chocolate chips, but you can use semisweet or milk chocolate, if preferred.
- If you prefer no nuts, you can leave them out.
- Store the bread in an airtight container in the refrigerator. This bread is extra delicious when toasted in a toaster oven or regular oven.
Here's how to make it:
- To a blender, add the eggs and cottage cheese. Whip until smooth, about 30 seconds.
- Pour mixture into a large mixing bowl.
- Add the mashed bananas and whisk to blend.
- Add the flour, baking powder, salt, cinnamon, brown sugar and vanilla extract. Mix well to combine.
- Fold in the chocolate chips and walnuts until incorporated.
- Evenly spread the batter into an 8x4-inch loaf pan that's been lined with parchment paper.
- Bake at 350 degrees F for about 45 to 55 minutes, or until it passes the toothpick test. (If the loaf is getting too brown on top, you can cover it with aluminum foil.)
- Allow loaf to cool to room temperature before slicing and serving.
