Ingredients
- 3/4 cup cilantro, packed
- 1 large jalapeno, seeds and stem removed (see Recipe Notes)
- 13.5 ounces (1 can) unsweetened coconut milk (full fat)
- juice from 1 large lemon (about 3 tablespoons)
- 1 teaspoon ground cumin
- 1 teaspoon kosher salt
Recipe Notes
- If you would like more heat, add some or all of the the jalapeno seeds.
- Store the salad dressing in an airtight container, mason jar or salad dressing cruet.

- Place all the ingredients in a blender.
- Blend on high until smooth. Add salt and black pepper, to taste.
