We had some unexpected guests drop by, which meant I needed to whip up an easy, delicious dinner that let me still be engaged with my friends. This easy Greek chicken recipe fit the bill perfectly. I made the marinade then popped it into the fridge until we were ready to cook. You can grill this chicken (preferred) or cook it on the stovetop. Cooking it on the stovetop takes a bit longer, so I prefer the grill.
To make this Greek-inspired marinated chicken, you'll need to gather the following gluten-free ingredients from your fridge and pantry: lemons for juicing and zesting (read about the health benefits of lemons), shallots, garlic (check out the health benefits of garlic), olive oil, dried oregano, kosher salt, ground paprika, black pepper and boneless/skinless chicken thighs. The fresh parsley or oregano is an optional garnish.

These juicy chicken thighs make an amazing dinner paired with a salad or a favorite fresh vegetable. Ingredients
- 2 large lemons, zested and juiced
- 1 shallot
- 4 cloves garlic
- 1/4 cup olive oil
- 2 teaspoons dried oregano
- 1 1/2 teaspoons kosher salt
- 1 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper
- 2 pounds boneless/skinless chicken thighs (about 8)
- 6 sprigs fresh parsley or fresh oregano, for garnish (optional)
- sprinkle of crushed red pepper flakes, if desired (optional)
Here's how to make it:
- Make the marinade by juicing and zesting the lemons into a large mixing bowl.
- Mince the shallot and garlic into the bowl.
- Add the olive oil, dried oregano, salt, paprika and pepper into the bowl. Whisk to combine.
- Add chicken and use tongs to coat the chicken in the marinade. Cover and place in the refrigerator for 1 to 2 hours. (You could use boneless chicken breasts instead of thighs, but it may affect cooking time.)
- When marinating time is finished, heat the grill or skillet on medium-high. Cook the chicken, flipping halfway through, until internal temperature reaches 165 degrees F. Depending on your stove or grill, this could take 5 to 10 minutes per side. Monitor with a meat thermometer.
- Remove chicken to a platter and garnish with parsley or oregano, if desired. Serve and enjoy!
