Greek chicken is one of my favorite dinners. Recently I've made baked Greek chicken and skillet Greek chicken, which were both hits with the family and guests. You cannot beat a good Greek marinade for chicken! This Greek marinade recipe is my favorite.
To make this flavorful marinade recipe you only need eight ingredients you probably already have in your kitchen. Here is your short shopping list: lemons for juicing and zesting, a shallot, fresh garlic, olive oil, dried oregano, kosher salt, black pepper and ground paprika. Simply whisk or shake the ingredients together and it's ready to be used.
Don't stop at just chicken! Use this Mediterranean marinade for anything, from chicken to fish to shrimp to pork to beef to vegetables. You could even drizzle it on a salad (pasta salad, lettuce salad or grain salad)! How will you use it?

Ingredients
- 2 large lemons, zested and juiced
- 1 shallot, chopped fine
- 4 cloves garlic, minced or pressed
- 1/4 cup olive oil
- 2 teaspoons dried oregano
- 1 1/2 teaspoons kosher salt (or to taste)
- 1 teaspoon paprika
- 1/2 teaspoon freshly ground black pepper (or to taste)
Here's how to make it:
- Put all the ingredients into a mixing bowl. You could also use a mason jar or salad dressing cruet.
- Whisk to combine (or shake). Taste and add more salt and pepper, if needed. Store the marinade in an airtight container until ready to use.
