If you ask me, one of the best things about summer is all of the outdoor cooking. We absolutely love to grill, and not just meats. In fact, vegetables are among our favorite things to grill because it's so easy to do and the vegetables turn out so delicious. Especially when you grill them Mediterranean style.
Mediterranean grilled vegetables are not only delicious but also nutritious. Grilling vegetables may help them retain more of their nutritional value than other cooking methods (such as boiling them). You can enjoy these tasty grilled vegetables on their own or add them to a variety of recipes.
The best part is how easy they are to make. With a bit of olive oil and spice – or even just some sea salt and black pepper – you can add a bunch of flavor or keep it simple. To make this quick gluten-free grilled vegetables recipe, here's what you need to gather: extra virgin olive oil, fresh asparagus (check out the health benefits of asparagus), bell peppers (check out the health benefits of bell peppers), onions (check out the health benefits of onions) and garlic powder. The sea salt and black pepper, to taste, is optional. You toss the vegetables in the olive oil and garlic powder then grill them until tender.
Serve these easy, delicious Mediterranean grilled vegetables with your favorite proteins, with pasta or rice, or with potatoes or in salads. Here are some vegetables to try grilling:
- asparagus
- bell peppers

Ingredients
- 2 1/2 tablespoons extra virgin olive oil
- 1 teaspoon garlic powder
- sea salt and black pepper, to taste
- 1 bunch (about 1 pound) fresh asparagus
- 1 cup bell peppers, sliced
- 1 cup onions, sliced
Recipe Notes
- You can place the vegetables in a grill pan or basket, or directly onto the grill. If placing onto the grill, you may want to place some additional oil on the grates so the vegetables don't stick.
- Feel free to change up the spices that you mix in with the olive oil. I added some oregano to the peppers and onions and it was delicious.
- Place any leftovers in an airtight container in the refrigerator and reheat in the microwave (or use in other recipes).
Here's how to make it:
- In a large mixing bowl, add the olive oil and garlic powder. Add sea salt and black pepper, to taste, if desired. Whisk to blend. Add the vegetables and toss to coat.
- Light the grill and heat to 450 degrees F. Add a bit of oil to the grill, if needed, to prevent sticking. Place vegetables in a grill pan or basket, or directly onto grill, for about 3 to 5 minutes per side, or until tender and cooked through.
- Remove from grill and serve immediately.
