To make this barbecue chicken salad recipe you will need to grab these simple ingredients from your pantry and fridge: cooked chicken, barbecue sauce, romaine lettuce, greens, bacon, cheddar cheese, black beans, cherry tomatoes, corn chips, green onions, buttermilk, mayonnaise, apple cider vinegar, fresh chives, Worcestershire sauce, kosher salt, black pepper, garlic powder and onion powder.
This tasty, quick and easy salad can be tossed or served like a cobb salad like I did. Either way, you get the health benefits of lettuce and the health benefits of black beans. This fresh salad makes a wonderful main dish salad on its own for lunch or dinner, or add a side of crusty bread or a bowl of soup or chili on cooler nights.

Ingredients
Salad
- 2 cups shredded cooked chicken
- 1/3 cup barbecue sauce
- 3 cups coarsely chopped romaine lettuce
- 3 cups coarsely chopped other lettuce or greens of your choice (more romaine is fine, too)
- 4 thick-cut bacon slices, cooked and broken into pieces
- 4 ounces shredded cheddar cheese
- 15 ounces (1 can) black beans, rinsed and drained
- 1 cup cherry tomatoes, cut in half
- 1 cup corn chips, broken into pieces
- 3 - 4 green onions, sliced thin
Ranch Dressing
- 1/4 cup buttermilk (see Recipe Notes)
- 1/4 cup mayonnaise
- 3 tablespoons apple cider vinegar
- 2 tablespoons finely chopped fresh chives
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon kosher salt
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
Recipe Notes
- If you don't have buttermilk you can use 1/4 cup whole milk and 1/2 teaspoon vinegar or lemon juice.
- Use whatever type of barbecue sauce you like. You can even make homemade barbecue sauce.
Here's how to make it:
- Make the dressing by placing all the ingredients in a bowl or jar and whisk or shake to combine. Place in the fridge.
- Mix your shredded chicken with barbecue sauce in a bowl.
- In a large salad bowl add your lettuce and/or greens.
- Place the chicken, bacon, cheese, tomatoes, beans, green onions and chips (save a few for the top) on the greens. Add some of the dressing and toss to combine. Sprinkle a few more chips on top, taste to see of more dressings is needed.
- Serve and enjoy!
