These fluffy banana bread pancakes are quick and easy to make. Not only that, but unlike regular, plain pancakes, you get the health benefits of banana and the health benefits of walnuts! To make this pancake recipe you will need self-rising flour, nut milk, walnuts, a banana, coconut oil, brown sugar, ground cinnamon and ground nutmeg. Mix the ingredients together, ladle onto a skillet or griddle and cook until fluffy and golden. Now grab the maple syrup!
Make these banana pancakes for breakfast or brunch and you won't have anyone hitting snooze or sleeping in. Serve the pancakes alone with more sliced fresh banana and maple syrup, or add your favorite breakfast side dishes like bacon, sausage, fresh fruit or yogurt. You could even serve them for dessert with whipped cream and caramel sauce on top!

Ingredients
- 1 1/4 cups self-rising flour
- 1 cup nut milk
- 1 cup chopped walnuts
- 1 banana, mashed
- 1/4 cup coconut oil
- 1/4 cup brown sugar, packed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
Recipe Notes
- If you don't have self-rising flour, you can use 1 cup of all-purpose flour, 1 teaspoon baking powder, 1/2 teaspoon salt and 1/4 teaspoon baking soda for every 1 cup the recipe calls for.
- If you don't like walnuts, use almonds, pecans or your favorite nuts.
- Be sure your banana is overripe for the best results.
- You can use light or dark brown sugar.
- You could use regular milk instead of nut milk.
Here's how to make it:
- Stir together all of the ingredients in a mixing bowl.
- Heat a griddle or skillet over medium heat and add a little coconut oil to coat.
- Pour the batter into the hot skillet and cook until the pancakes are golden on both sides and cooked through, about 2 minutes per side. Serve with maple syrup and more fresh sliced bananas.
