These irresistible peanut butter brownie pinwheel cookies combine both of those into one magical cookie experience.
These pinwheel cookies are made with two simple doughs. To make the doughs you will need the following ingredients: butter, creamy peanut butter, granulated sugar, brown sugar, eggs, vanilla extract, flour (all-purpose or gluten-free), baking soda, baking powder, salt and unsweetened cocoa powder. After mixing up the two doughs, you form them together to create a pinwheel ball of dough (don't worry if it's not perfect!). Bake for about 10 minutes, let them cool a bit then grab a glass of milk or cup of coffee.
These sweet cookies are so rich and satisfying, you can serve them for dessert. But feel free to snack on them anytime during the day.

Ingredients
Peanut Butter Cookie Dough
- 1/4 cup butter, softened
- 1/3 cup creamy peanut butter
- 1/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 1 egg
- 1 teaspoon vanilla extract
- 3/4 cups all-purpose flour
- 1/4 teaspoon baking soda
- pinch of salt
Brownie Cookie Dough
- 1/4 cup butter, melted
- 1/2 cup granulated sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/3 cup unsweetened cocoa powder
- 1/2 cup all-purpose flour
- 1/8 teaspoon baking powder
- pinch of salt
Recipe Notes
- Don't stress if you can't make perfect pinwheels! Just use about 1 tablespoon of each dough and do the best you can.
- Store the cookies in an airtight container to keep them fresh.
- For gluten-free cookies, use gluten-free flour.
- You could make the doughs ahead of time and keep them covered in the fridge until ready to bake.
- For the best results, be sure not to overbake the cookies.
Here's how to make it:
- To make the peanut butter cookie dough, cream together the butter, peanut butter, granulated sugar and brown sugar with an electric mixer until fluffy. Add the egg and vanilla. Beat to combine.
- In another bowl, whisk together the flour, baking soda and salt. Add to the wet ingredients, stirring until just combined.
- To make the brownie cookie dough, whisk together the meted butter and granulated sugar in a mixing bowl. Add the egg and vanilla. Stir to combine.
- In another bowl, whisk together the cocoa powder, flour, baking powder and salt. Add to the wet ingredients until combined.
- To make the cookies, take about 1 tablespoon of each dough and roll them together into a ball. Twist the doughs together, being careful to keep them from mixing together, to create a pinwheel effect. Place the dough balls onto parchment paper-lined baking sheets.
- Bake in a preheated 350-degree F oven for about 10 to 12 minutes. Do not overbake. Remove and allow to cool on the baking sheet a few minutes before removing them to cool completely.
