Ingredients
- 1 cup chopped seedless cucumber
- 2 tablespoons Greek yogurt or mayonnaise
- 2 tablespoons grated Parmesan cheese or feta cheese
- 1 tablespoon chopped fresh herbs (chives, dill, parsley, oregano, basil, etc.)
- 1/2 teaspoon dried Italian seasoning, Tuscan seasoning or Mediterranean seasoning (or to taste)
- 1/2 teaspoon lemon juice
- salt and black pepper, to taste
Recipe Notes
- This recipe can easily be doubled for four or more servings.
- If you can't find a seedless cucumber, remove the seeds from a regular cucumber.
- Fresh is best when it comes to lemon juice, so squeeze your own. In a pinch, bottled lemon juice would work.

- Put all the ingredients into a mixing bowl. Season with salt and black pepper, to taste.
- Stir. Taste and adjust seasonings. Serve.
