Did you know cucumber could be a negative-calorie food? According to Healthline, "the term negative-calorie food typically refers to a food which supposedly takes more calories to eat, digest and process than it naturally contains and gives to your body." Nice! Cucumber is not only low in calories, but cucumber has many health benefits, too. While I love a good chicken salad or tuna salad sandwich, this refreshing cucumber salad sandwich recipe is now in my recipe binder. The sandwich is fresh, light and delicious.
To make this Mediterranean-inspired cucumber salad sandwich recipe you will need to gather the following ingredients: a seedless cucumber, Greek yogurt (read about the health benefits of Greek yogurt), Parmesan cheese, fresh herbs, dried Italian seasoning or Tuscan seasoning, a lemon for juicing and sandwich bread. Don't forget to grab any sandwich toppings you wan to add, like fresh lettuce, red onion or tomato.
The ingredients are simply stirred together in a bowl, then piled onto sandwich bread. Because cucumbers contain a lot of water, toasting the bread makes a sturdier sandwich, but that's up to you. Serve the vegetable sandwich for lunch or for dinner with a salad or bowl of soup on the side.

Ingredients
- 1 cup chopped seedless cucumber
- 2 tablespoons Greek yogurt
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon chopped fresh herbs (chives, dill, parsley, oregano, basil, etc.)
- 1/2 teaspoon dried Italian seasoning, Tuscan seasoning or Mediterranean seasoning (or to taste)
- 1/2 teaspoon lemon juice
- salt and black pepper, to taste
- 4 slices sandwich bread
Recipe Notes
- You could use feta cheese instead of Parmesan cheese.
- Instead of Greek yogurt, you can use mayonnaise.
- This cucumber salad would also be delicious served with crackers.
- If you use a regular cucumber, remove the seeds or you will have watery cucumber salad.
- If you're watching your carbs, make an open-face sandwich with one slice of bread.
- The recipe can be cut in half for one sandwich.
- Store any leftovers in an airtight container in the fridge.

- Put all the ingredients into a mixing bowl. Season with salt and black pepper, to taste.
- Stir to combine. Taste and adjust seasonings, if needed.
- Pile onto toasted bread with desired sandwich toppings.
