- 3/4 cup Malt-O-Meal (original flavor)
- 1 1/4 cups flour
- 1/2 cup granulated sugar
- 3/4 cup milk
- 1/4 cup vegetable oil
- 1 egg
- 1 tablespoon baking powder
- large pinch of salt
- 1 1/2 teaspoons vanilla extract
- 1/2 - 1 cup chocolate chips

- You could omit the chocolate chips and use raisins, dried cherries, dried blueberries or dried cranberries instead.
- Store the muffins in an airtight container to keep them fresh.

- Put all the ingredients into a mixing bowl. Stir until just combined.
- Spoon the mixture into greased or lined muffin tins, filling about 3/4 full.
- Bake in a preheated 400-degree F oven for about 18 minutes, or until a toothpick comes out clean.
