These lovely little salmon bites with creamy sundried tomato dipping sauce are a great appetizer or main dish for dinner. The moist salmon bites crisp up really well under the broiler in just a few minutes, and the dipping sauce is a wonderful side and fresh addition. We enjoyed this salmon recipe with some simple steamed broccoli and a slice of fresh sourdough. It was a complete meal everyone loved.
You don’t need many ingredients to make these gluten-free salmon bites with creamy sundried tomato dipping sauce. Here is what you’ll want to have on hand: salmon, sundried tomatoes packed in oil, Italian seasoning, garlic powder, onion powder, sour cream, rice vinegar, salt, black pepper and fresh basil.

Ingredients
- 1 pound skinless center-cut salmon fillet (about 1-inch thick), cut into 1-inch pieces
- 1/4 cup sundried tomatoes in oil, drained and chopped (save the oil)
- 2 1/2 tablespoons oil from jar of sundried tomatoes (divided)
- 1/2 teaspoon salt, or to taste
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 cup sour cream
- 1 teaspoon rice vinegar
- 1/4 teaspoon ground black pepper
- 1 teaspoon fresh basil, thinly sliced
Recipe Notes
- The sundried tomatoes come in a jar packed with oil. Just remove the 1/4 cup and chop and then measure the oil leftover in the jar when needed.
- Cut the salmon into uniform sizes so it cooks evenly.
- Store any leftovers in an airtight container in the fridge for up to two days.
Here's how to make it:
- Move the oven rack to 8 inches below the broiler and preheat the oven to broil.
- Put the salmon into a mixing bowl. Add in 1 tablespoon of the oil from the sundried tomatoes, Italian seasonings, garlic powder, onion powder and 1/2 teaspoon of salt. Mix well to coat.
- Put the salmon onto a parchment paper-covered baking sheet.
- Pop the salmon under the preheated broiler for about 6 to 7 minutes.
- While the salmon cooks, put the sour cream, sundried tomatoes, 1 1/2 tablespoons of sundried tomato oil, a pinch of salt, black pepper and rice vinegar into a food processor or blender. Blend until smooth, scraping down the sides as needed. Serve the dipping sauce with the salmon bites sprinkled with the fresh basil and enjoy!
