I make a version of this Mediterranean salad quite often because I love it so much. This cucumber, feta and tomato salad recipe has a lovely sweet and tangy dressing that really brings out the taste of the fresh vegetables and herbs. This is one Mediterranean-inspired salad recipe that is worth trying!
To make this cucumber salad recipe you will need olive oil, white wine vinegar, fresh dill, fresh chives, honey, Dijon mustard, crushed red pepper flakes, garlic, kosher salt, black pepper, fresh tomatoes, cucumbers, feta cheese, fresh parsley and fresh basil. This easy salad is definitely a farm-to-table favorite with all those fresh herbs and vegetables!

Ingredients
Dressing
- 1/3 cup olive oil
- 3 tablespoons white wine vinegar
- 2 tablespoons minced fresh dill
- 1 tablespoon minced fresh chives
- 1 tablespoon honey (optional)
- 1 tablespoon Dijon mustard
- 1/4 teaspoon crushed red pepper flakes
- 3 garlic cloves, grated
- pinch of kosher salt
- pinch of black pepper
Salad
- 3 ripe tomatoes, cut into bite-size pieces (heirloom tomatoes are best)
- 6 Persian or English cucumbers, peeled and cut into bite-size pieces
- 8 ounces feta, cubed
- 1/2 cup parsley leaves
- 3 tablespoons chopped fresh dill
- 2 tablespoons chopped fresh chives
- 6 basil leaves, cut or torn
Recipe Notes
- I really like using Persian or English cucumbers for this fresh and healthy recipe, as they are usually a bit crisper than a traditional cucumbers. But as always, use what you have available!
- If you don't like feta cheese, try fresh mozzarella balls or goat cheese instead.
Here's how to make it:
- Make the dressing by combining all the ingredients in a small bowl or jar and mixing or shaking well.
- Prep the salad by placing tomatoes, cucumbers and feta in a large salad bowl or platter.
- Shake or mix the dressing and drizzle a few tablespoons of it on the salad. Season with salt and black pepper, and then top with the chopped herbs and more dressing.
