This fluffy high-protein cottage cheese pancake recipe is so quick and easy you can even make on busy mornings. To make these nutritious pancakes you will need cottage cheese, eggs, vanilla extract, baking powder and flour, plus a little vegetable oil to cook them in.
Fluffy and full of flavor, these cottage cheese pancakes are perfect for breakfast or brunch with a side of fresh fruit. You can also serve them as a quick snack. For breakfast, serve them with jam, fruit preserves, honey or maple syrup.

Ingredients
- 1 1/2 cups cottage cheese
- 4 eggs
- 1 teaspoon vanilla
- 2 tablespoons granulated sugar
- 1 tablespoon baking powder
- 1 cup all-purpose flour or gluten-free flour
- vegetable oil or butter, for cooking
Here's how to make it:
- Stir together the cream cheese and eggs in a mixing bowl.
- Add the vanilla extract and sugar. Mix well.
- Stir in the baking powder and flour. Mix well. (For gluten-free pancakes, use gluten-free flour. For some sweetness and texture, you can stir some raisins into the batter before cooking.)
- Heat about 2 tablespoons of vegetable oil in a skillet over medium heat. Ladle the batter into the pan to form pancakes. Cook until golden on one side.
- Flip the pancakes over and continue to cook until cooked through. Store any leftovers in an airtight container in the fridge for up to three days.
