One of my kids' favorite meals to make together is pumpkin pancakes. We enjoy making this fluffy pumpkin pancakes recipe on cool, crisp fall mornings for breakfast or brunch. The pancakes mix up quickly and taste amazing with maple syrup or honey.
A bonus is that pumpkin is good for you! (Read about the health benefits of pumpkin.) To make these fluffy pumpkin pancakes to celebrate the first day of fall (September 22, 2024) you will need flour, baking powder, brown sugar, ground cinnamon, milk, an egg, butter, canned pumpkin puree, maple syrup and chopped pecans or walnuts (check out the health benefits of walnuts). For a decadent pumpkin pancake that could be served for dessert, stir in some chocolate chips and top with whipped cream. Delish.
This pumpkin pancakes recipe is for a single batch, but we double it. Refrigerate or freeze leftovers to have a quick, hot breakfast or brunch another time. Or top with whipped cream for a fall-inspired dessert.

Ingredients
- 1 cup flour (all-purpose or gluten-free flour)
- 1 teaspoon baking powder
- 3 tablespoons brown sugar
- 1 teaspoon cinnamon
- 1 cup milk
- 1 egg
- 2 tablespoons melted butter
- 7.5 ounces (1/2 can) solid pack pumpkin
- 1/4 cup maple syrup
- chopped pecans or chopped walnuts (optional)
Here's how you make it:
- Mix ingredients together in a bowl until combined. (Use canned pumpkin puree, not pumpkin pie filling. You could add some vanilla extract to the batter. For gluten-free pancakes, use gluten-free flour.)
- Pour the batter into a hot skillet and cook until bubbles form. Flip and continue to cook until done. Top with melted cinnamon butter and pecans, if desired. Serve. These pancakes freeze well. Wrap in freezer bags and freeze for up to two months.
