Pumpkin spice muffins are my favorite thing about autumn. This easy pumpkin spice muffin recipe is a hit with my family. Loaded with fall flavor, this delicious pumpkin recipe tastes like pumpkin pie in muffin form. Great as a grab-and-go breakfast or on-the-go snack, this is my favorite pumpkin recipe (and I hope it will become yours, too)!
To make these moist pumpkin muffins you will need to gather the following ingredients: all-purpose flour (you could use gluten-free flour), pumpkin pie spice, baking soda, salt, canned pumpkin puree, granulated sugar, brown sugar, eggs, vegetable oil and vanilla extract.
These fall-inspired muffins are delicious at room temperature or even slightly chilled. Serve them as a snack, dessert or even for brunch or breakfast with that hot pumpkin spice latte. While you nibble on these irresistible muffins, you are also getting the health benefits of pumpkin.

Ingredients
- 1 3/4 cups all-purpose flour
- 1 tablespoon pumpkin pie spice
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 15 ounces (1 can) pure pumpkin puree
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tablespoon vanilla extract
Recipe Notes
- You could add some ground cinnamon to the batter before baking.
- Be sure to use pumpkin puree and not pumpkin pie filling.
- For a gluten-free muffin, use gluten-free flour.
- Store the muffins in an airtight container in the fridge to keep them fresh.
Here’s how to make it:
- Preheat oven to 375 degrees F. Place paper baking cups into a muffin pan (or spray muffin pan with nonstick cooking spray). Set aside.
- In a medium bowl, whisk the flour, pumpkin spice, baking soda and salt until well combined. Set aside.
- In large bowl, whisk together the pumpkin, sugar and brown sugar. Beat in eggs, then vegetable oil and vanilla extract. Slowly whisk in the flour mixture until there are no lumps.
- Fill muffin cups 3/4 full. Bake muffins for 18 to 20 minutes, or until a toothpick inserted in the center comes out clean. Sprinkle a bit of sugar on top, if desired.
