What's even better is that this Greek-inspired casserole can be baked ahead of time and used during your busy wok or school week for breakfast, lunch or even dinner.

Ingredients
- 1/2 pound turkey sausage, casings removed
- 1/2 a bell pepper, (red, green, orange or yellow)
- 1 shallot, finely chopped
- 1 cup fresh broccoli florets
- 1 cup artichoke hearts, packed in water
- 1/3 cup sundried tomatoes, re-hydrated and chopped
- 6 eggs
- 6 egg whites
- 3 tablespoons milk
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground black pepper
- 1/3 cup crumbled feta cheese
Recipe Notes
- If you use raw sausage, make sure to break it up and cook until no pink remains. If you use pre-cooked sausage, slice before warming with the onions and peppers.
- You can easily omit the sausage to make the casserole vegetarian.
- I only had sundried tomatoes and artichoke hearts in oil, so I drained and rinsed them well before using.
Here's how to make it:
- Sauté sausage, shallots and bell pepper for 5 to 10 minutes.
- Transfer the sausage and vegetables to an 8x8-inch baking dish or similar size casserole dish.
- Layer broccoli, artichoke hearts and sundried tomatoes on top of the sausage mixture.
- Mix milk, eggs, egg whites and seasoning with a fork.
- Pour the mixture over the vegetable mixture.
- Sprinkle with feta cheese.
- Bake in a preheated 350-degree F oven for 45 to 50 minutes, or until no liquid remains on top. Remove from oven and serve warm.
