Sometimes simple is just better. This arugula salad recipe with apples nuts and a tangy vinaigrette dressing is the perfect example of that. Three ingredients plus a lovely clean and simple dressing make this salad one you’ll want to make over and over.
To make this simple arugula salad recipe you will need fresh arugula, almonds (or your favorite nuts), Pecorino cheese, crisp apples, lemons for juicing, red wine vinegar, Dijon mustard, dried oregano, salt, black pepper, olive oil and maple syrup. Whisk the vinaigrette ingredients together then toss with the salad ingredients. So easy!
Serve this fresh, healthy salad as a side dish for dinner or as a light lunch. If you want to make it a complete meal just grill a piece of fish, chicken or tofu. You now have a main dish salad worthy of balmy summer nights!

Ingredients
Salad
- 6 ounces arugula
- 1/2 cup slivered almonds, toasted
- 4 ounces shaved Pecorino cheese
- 1 - 2 apples, washed, cored and sliced into bite-size pieces
Salad Dressing
- 3 tablespoons lemon juice
- 1/2 tablespoon red wine vinegar
- 1/4 teaspoon Dijon mustard
- 1/4 teaspoon dried oregano
- 1/4 teaspoon salt (or to taste)
- 1/4 teaspoon black pepper (or to taste)
- 1/4 cup extra virgin olive oil
- 2 teaspoons maple syrup (optional)
Recipe Notes
- Instead of almonds try cashews, pine nuts, walnuts, pecans or even pumpkin seeds.
- Instead of Pecorino, you could use Parmesan or your favorite cheese.
- Fresh is always best with lemon juice, so squeeze your own if you can. In a pinch, bottled lemon juice will work.
Here's how to make it:
- Make the dressing by placing all the ingredients in a small bowl or jar and blend well.
- Place the salad greens in a large bowl and pour 1/3 of the dressing over it. Toss well.
- Add the nuts, apples and cheese and a bit more dressing. Toss again. Serve in salad bowls and enjoy!
