It seems that I can’t resist the flavor combination of lemons and blueberries! This irresistible lemon blueberry scone recipe is another example of why. These easy, light and flaky scones, with an optional glaze, are so simple to put together and baked in just about 30 minutes.
To bake these easy scones you need to gather the following ingredients: fresh lemons, flour, granulated sugar, baking powder, salt, butter, fresh or frozen blueberries, milk and eggs. For the optional sweet glaze, you will also need powdered sugar and more fresh lemon juice.
Pair these tender scones with your tea or coffee for a light breakfast or a simple afternoon snack. These lemony blueberry scones are not too sweet so they're perfect any time of the day, even for dessert.

Ingredients
- 1 lemon, juiced and zested
- 2 cups flour (all-purpose flour or gluten-free 1:1 flour)
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 6 tablespoons cold butter
- 1/2 cup blueberries, frozen or fresh
- 1/4 cup milk
- 2 large eggs
Glaze
- 1 cup powdered sugar
- 2 tablespoons fresh lemon juice
Recipe Notes
- To easily grate the butter place it in the freezer for five minutes when you start the recipe.
- Store the scones in an airtight container to keep them fresh.
Here's how to make it:
- In a large mixing bowl add the flour, baking powder, salt, lemon zest and sugar. Mix well.
- Use a box grater to grate the butter into the dry ingredients. Stir well using clean hands to combine, if needed.
- Add the blueberries to the mixture and stir to coat them.
- In a small mixing bowl whisk the eggs and milk together. Add it to the blueberry mix. Stir until everything is combined.
- Place the dough on a parchment paper-lined baking sheet.
- Press it into a circle about 1-inch thick.
- Cut the dough into 8 wedges and spread out on the paper.
- Bake in a preheated 425-degree F oven for 15 to 18 minutes, or until the scones are golden brown. Remove from the oven and place on a cooling rack. If you would like to top the scones with the glaze, mix the lemon juice with the powdered sugar and blend well. Drizzle on top of the cooled scones. Enjoy!
