Whether you're a broccoli lover or not, you just may fall in love with these broccoli cheddar wedges! These tasty broccoli cheddar wedges are simple, low in carbs and a delicious snack, side dish or appetizer. I made them for friends as an appetizer with my lazy tzatziki sauce and they loved them. Add some vegetables to your dinner with this easy broccoli recipe tonight and the family will thank you for the fresh way to enjoy vegetables!
To make these fun broccoli cheddar cakes, you will need to grab these ingredients from the fridge and your spice rack: fresh broccoli florets, cheddar cheese, Parmesan cheese, eggs, chili powder, ground paprika, onion powder, garlic powder and salt. The broccoli is cooked, chopped and squeezed dry before being added to the remaining ingredients. Shape into patties and bake until golden brown.

Ingredients
- 12 ounces broccoli florets, washed
- 1 cup grated cheddar cheese
- 1/3 cup grated Parmesan cheese
- 2 eggs
- 1/2 teaspoon chili powder
- 1/2 teaspoon paprika
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt (or to taste)
Recipe Notes
- Be sure to squeeze as much water as you can out of the broccoli so you don't get soggy wedges.
- Store any leftovers in an airtight container in the fridge. Reheat in the oven or microwave.
Here's how to make it:
- Place a pot of water on the stove over high heat. When the water comes to a boil, gently add the broccoli and cook on medium-high for about 5 minutes, or until the broccoli is very soft. (If you prefer steaming you can also steam the broccoli for 5 minutes.) Drain the broccoli well and place on a cutting board.
- On the cutting board, finely chop the broccoli. Place the broccoli on a cheesecloth or paper towel and ring out all of the liquids from the broccoli. Really wring to get out as much liquid as possible.
- Place all the ingredients into a medium bowl.
- Mix well.
- Place a few tablespoons of mixture formed into wedges onto a parchment paper-lined baking sheet. Bake in a preheated 400-degree F oven for 18 to 20 minutes, or until they are firm and brown.
- Serve with a side of tzatziki or any dipping sauce of your choosing and enjoy!
