Easy Coconut Flour Chocolate Cake Recipe Is Gluten-free Baking Bliss by Donna John

My favorite grocery store has these yellow coupons that are sometimes hard to resist. Often they're buy this product and get this other product free. That's how I ended up with a bag of coconut flour. I've never cooked or baked with coconut flour, so I went on the hunt for a good recipe using this gluten-free flour. A gluten-free chocolate cake recipe caught my eye. I tweaked the recipe by adding a mashed banana, and it was a delicious dessert that took no time at all to make and bake.
To make this low-sodium, gluten-free cake you will need to gather the following ingredients: coconut flour, baking powder, cocoa powder, butter, a ripe banana, granulated sugar, eggs, vanilla extract and a pinch of salt. The cake is in the pan in no time, and bakes up in about 35 minutes, though ovens vary.
This chocolate cake is a simple dessert that can be served as is or with fluffy homemade whipped cream, vanilla ice cream, chocolate sauce or even raspberry jam or cherry pie filling.

Ingredients
- 1/2 cup coconut flour
- 1 teaspoon baking powder
- 1/2 cup cocoa powder
- 6 tablespoons butter
- 1 ripe banana
- 3/4 cup granulated sugar
- 6 eggs
- 1 1/2 teaspoons vanilla extract
- pinch of salt
Recipe Notes
- You can bake the cake in a 8x8-inch baking pan for 30 to 35 minutes, or until a toothpick comes out clean.
- Store the cake in an airtight container to keep it fresher longer.
Here's how to make it:
- Whisk together the coconut flour and baking powder in a mixing bowl.
- In another bowl, melt together the butter and cocoa powder in the microwave about 60 to 90 seconds, or until melted. Stir together.
- Add the eggs, granulated sugar, pinch of salt and vanilla extract.
- Stir to combine then add the mashed banana. Stir to combine.
- Pour the batter into a greased or buttered loaf pan.
- Bake for about 35 to 40 minutes, or until a toothpick comes out clean.
- Cool a few minutes before turning the cake out onto a serving plate. Cut into slices and serve.
