Ingredients
- 1 2/3 cups flour
- 1/2 teaspoon baking powder
- 2 teaspoons cinnamon
- 1 teaspoon ground ginger
- 1 teaspoon cardamom
- 1/2 teaspoon allspice
- 1/2 teaspoon ground cloves
- 2 sticks (1 cup) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup brown sugar
- 4 eggs
- 1/2 cup milk or nut milk
- 1 1/2 teaspoons vanilla
Here's how to make it:
- Combine the flour, salt, baking powder, cinnamon, ginger, cardamom, allspice and cloves in a bowl.
- In another bowl, beat together the granulated sugar, brown sugar and butter with an electric mixer. Add the eggs, milk and vanilla. Mix well.
- Add the dry ingredients to the wet ingredients. Mix until just combined. Pour into a greased 9x5-inch loaf pan. (For the moistest cake, do not overmix the batter.)
- Bake in a preheated 350-degree F oven for about 60 to 65 minutes or until a toothpick comes out clean. Cool. Store any leftover cake in an airtight container on the counter.
