Ingredients
- 3 eggs, beaten
- 1/3 cup Greek yogurt or cottage cheese
- 3 tablespoons extra virgin olive oil
- 1 2/3 cups flour
- 1/3 cup grated Parmesan cheese
- 2 teaspoons baking powder
- 1 teaspoon salt
- 3 cups zucchini, shredded
- 1 cup carrots, shredded
- 3 green onions, diced
- 2 tablespoons fresh dill
- 1 cup mozzarella cheese, shredded
- sesame seeds (optional)

Recipe Notes
- Make sure not to take any moisture out of the zucchini before adding it to the batter.
- If you like, you can substitute any cheese for the mozzarella. I made a batch with gruyere and it was delicious.
- I made one batch with gluten-free flour and it turned out great.
Here's how to make it:
- Put a piece of parchment paper into a 13x9-inch baking pan. (The parchment paper won’t sit in the pan but don’t worry about that because the batter will press it down.)
- Place eggs, cottage cheese and olive oil in a large mixing bowl. Stir to combine. Add in the flour, baking powder, salt and Parmesan cheese. Stir well.
- Add the zucchini, carrots, green onions and dill. Stir well.
- Add the cheese and blend gently (I like using a fork).
- Pour the batter into the prepared baking pan and use a spatula to press into the corners. Drizzle a bit of olive oil and sprinkle with sesame seeds, if desired.
- Bake in a preheated 350-degree F oven for 35 to 45 minutes, or until golden brown.
- Let cool for 10 minutes before cutting into squares.
