Every now and then, I want just a little something for a snack that hits the spot and is healthy (or healthier). This old-fashioned almond maple cookie recipe is the answer. The simple cookies are made with wholesome ingredients and are so easy to make. The cookies require only two ingredients and are ready to pop into the oven in only five minutes. The sweet cookies come out warm, chewy and ready to be paired with a cup of tea or coffee, or a glass of cold milk.
And yes, you read right. There are only two ingredients in these old-fashioned almond maple cookies. Amazing! Here's what you'll need to grab from the pantry: almond flour and maple syrup. Nothing more, nothing less. Mix the two ingredients together and bake until golden. So easy! Plus, you get the health benefits of almond flour and the health benefits of maple syrup. They even give you some protein, too.
Serve these low-sodium and even gluten-free cookies are as a quick sweet snack with afternoon tea or coffee, or for dessert with some ice cream on the side. Why not? You could even crumble the cookies over the ice cream. Genius!

Ingredients
- 1 cup almond flour
- 5 tablespoons maple syrup
Here's how to make it:
- In a large mixing bowl, add the almond flour and maple syrup. Using a fork or small spatula, stir to combine. (You can substitute honey or agave nectar for the maple syrup.)
- Create six cookies using your damp hands to form the batter into balls, then gently press them flat. The flatter the cookie, the crisper they will be, and the thicker the cookie, the chewier they will be. Place cookies onto a parchment paper-lined baking sheet. (The number of cookies you get depends upon the size of the balls you form.)
- Bake in a preheated 350-degree F oven for 10 to 12 minutes, or until the cookie edges are golden brown.
- Remove and cool on a wire rack. The longer you cool them, the crispier they will become.
- Enjoy with your favorite beverage or a bit of ice cream. Store in an airtight container for five to seven days (but I don't think they will last that long).
