Crispy & Creamy Potato Salad Recipe: This Tater Tot Recipe Went Viral

Any recipe that went viral is going to get my attention. But throw in that it's a potato salad, crispy, made with fresh herbs and tater tots, and you'd better step away. When my daughter told me about this crispy potato salad recipe that was going viral on TikTok, I knew I had to try it. This is a tweaked version of the cold salad recipe I found floating around the internet. This is one interesting potato salad recipe!

To make this crispy potato salad you need to gather the following ingredients from the fridge, freezer and pantry: a bag of frozen tater tots, a lemon for juicing, mayonnaise, Dijon or whole-grain mustard, fresh garlic, fresh chives, fresh dill, fresh parsley and a red onion. The herbs add so much freshness to the potato salad, while the mayonnaise adds creaminess and the lemon and garlic interesting flavor notes.

This creamy and crispy potato salad can be served with pork, chicken, lamb, beef or seafood. I served mined with crispy curry baked chicken and fresh broccoli.

Ingredients

  • 14 ounces (half a 28-ounce bag) frozen tater tots
  • 1 lemon, juiced
  • 1/2 cup mayonnaise
  • 2 teaspoons Dijon mustard or whole-grain mustard
  • 1 clove garlic, minced
  • 1/4 cup chopped fresh chives
  • 2 tablespoons minced fresh dill or 1/2 - 1 teaspoon dried dill
  • 2 tablespoons minced fresh flat-leaf parsley or 1 teaspoon parsley flakes
  • 1 small red onion, chopped fine

  • You could use chopped green onions in this potato salad in place of the red onion, or do a combination of both.
  • You could use Greek yogurt instead of mayonnaise.
  • Eat this potato salad as soon as it's mixed together or the tater tots will get soggy.

Here's how to make it: 

  1. Put the tater tots onto a baking sheet. Bake in a preheated 375-degree F oven for 10 minutes. Remove the tots from the oven and use the bottom of a drinking glass to smash them flat. Mist the tops with nonstick cooking spray.
  2. Return the tater tots back to the oven and bake about 30 minutes more, or until crispy and golden.
  3. While the tater tots cook, combine the remaining ingredients in a bowl. Season with salt and black pepper, to taste.
  4. Remove the tater tots from the oven and let them cool about 5 minutes. Add them to the mayonnaise mixture and toss to coat.
  5. For the crispiest potatoes, serve immediately.
