Meatloaf shows up on my dinner table often. Not only do I have two freezers full of ground beef, but it's an inexpensive dinner – and a comforting one. Meatloaf is high on the most popular comfort foods, which is understandable. Most of us grew up eating it! This bloody mary meatloaf recipe spices things up with a simple ingredient: bloody mary mix. 

This meatloaf recipe mixes up in minutes, has minimal prep (chopping a few vegetables) and bakes up in about one hour. To make this delicious bloody mary meatloaf recipe you will need just a few simple, budget-friendly ingredients. Here is your shopping list: lean ground beef, breadcrumbs, bloody mary mix, an egg, an onion, a red or green bell pepper, garlic powder, onion powder, black pepper, salt and ketchup.

The bloody mary mix adds not only flavor, but moisture to the meatloaf. This moist meatloaf is the perfect weeknight dinner with your favorite side dishes. I like to serve mine with a fresh vegetable and mashed potatoes or roasted potatoes.

Here's how to make it: 

  1. Make the topping by combining the bloody mary mix and ketchup in a small bowl. Set aside.
  2. In a mixing bowl, combine all the meatloaf ingredients. Do not overmix. 
  3. Form the mixture into a loaf in baking pan or in a loaf pan. Spread the topping over the meatloaf. 
  4. Bake in a preheated 350-degree F for about 1 hour or until meat is cooked through. Let the meatloaf rest a few minutes before slicing.
