Who says meatballs have to be made with meat? We don't! These easy spinach meatballs have creamy feta cheese inside and are right at home in a pool of tomato sauce on top of pasta or as a side dish. These meatballs can be baked in the oven or fried up in a skillet.
To make this vegetarian meatball recipe you only need five simple ingredients (if frying, you also need olive oil). The ingredients are mixed together, rolled into balls and either baked or fried. The meatballs can be part of a pasta dinner or served as an appetizer with marinara sauce on the side for dipping. Delish!
We think you need to add this easy meatball recipe to your dinner rotation. While you're enjoying them, your body is enjoying the health benefits of spinach and the health benefits of feta cheese, which may be the healthiest cheese in the world!
Cuisine: American / Mediterranean
Prep Time: 10 minutes
Cook Time: 20 minutes (baked) 10 minutes (fried)
Total Time: 20 to 30 minutes
Servings: 6
Ingredients
- 9 ounces frozen spinach, thawed and squeezed dry
- 2/3 cup crumbled feta cheese
- 1 tablespoon dried Italian seasoning
- 1 egg
- 1/2 cup breadcrumbs
- olive oil, if frying
Recipe Notes
- Instead of frozen spinach you could cook fresh spinach then squeeze out all the moisture. Cook the fresh spinach in a saucepan with a little water until wilted.
- Nutritional information is based on the meatballs being baked. The number of meatballs depends on the size of the balls you shape.
- For gluten-free meatballs, use gluten-free breadcrumbs.
- Store any leftover meatballs in an airtight container in the fridge.
Here's how to make it:
- Combine the spinach, feta, Italian seasoning, egg and breadcrumbs in a mixing bowl. Season well with salt and black pepper.
- Shape the mixture into about 20 meatballs.
- To bake the meatballs, place them on a parchment paper-lined baking sheet. Bake in a preheated 350-degree F oven for about 20 minutes. To fry the meatballs, heat a little olive oil in a skillet. Fry the meatballs until golden on both sides, about 3 to 5 minutes. You may have to fry them in batches.
