Crispy 5-Ingredient Mediterranean Roasted Potatoes Recipe Makes Life Better

At 30Seconds, we sure love our roasted potato recipes. There's just something about sinking your teeth into a crispy potato wedge that makes life better.

At a recent dinner, these savory five-ingredient Mediterranean roasted potatoes were a huge hit with my family. Some family members ate them plain while others enjoyed dipping them, french-fry-style, into their favorite dipping sauces (yep, even ketchup).

To make these low-sodium potatoes wedges, you will need these five simple ingredients: potatoes, olive oil, garlic powder, paprika and oregano. You coat the potatoes in the Mediterranean spice mixture then roast them until they're golden brown. So simple!

Serve these gluten-free potatoes as a side dish with your favorite dinner recipes. Or, serve them as an appetizer or snack with your favorite dipping sauces. I served them with ham and vegetables for an easy meal that everyone loved.

Recipe Notes

  • You can add more or less garlic powder, depending on how much garlic flavor you want.
  • Season with salt and pepper, if desired.
  • I used fingerling potatoes, but this would work well with small Yukon gold, marble or red potatoes, too.
  • Store leftovers in a container in the refrigerator and reheat in the oven for maximum crispiness.

Here's how to make it:

  1. In a mixing bowl, add the olive oil, garlic powder, paprika and oregano. Stir to blend.
  2. Put the sliced potatoes into the mixing bowl and toss until potatoes are coated in the mixture. Season with salt and pepper, to taste, if desired.
  3. Pour the coated potatoes into a 13x9-inch baking pan or casserole dish, ensuring they are evenly distributed.
  4. Bake in a preheated 400-degree F oven for about 60 minutes, stirring once or twice during baking to ensure even browning, until golden. Remove from oven and serve as a side dish or as an appetizer with your favorite dipping sauces.
