5-Ingredient Honey Dijon Salmon Spread Recipe With Lemon Mascarpone Cheese

As part of a nutritious Mediterranean diet, I cook a lot of salmon. Healthy salmon is loaded with omega-3 fatty acids and protein, which is why it's a big part of my heart-healthy Mediterranean diet promoting health and longevity. A serving of salmon contains up to 25 grams of protein, is high in B vitamins (such as niacin, riboflavin, folic acid), has more than half of the recommended daily allowance of selenium and is a good source of potassium, which helps reduce blood pressure.

I purposely try to have leftover salmon to use in various recipes calling for salmon or seafood. This easy five-ingredient honey Dijon salmon spread recipe with lemon mascarpone cheese is my new favorite way to use cooked salmon. Mascarpone cheese is made from heavy cream and lemon juice, so it has a to-die-for buttery texture. It's ultra creamy and has a somewhat sweet flavor, making it ideal for sandwich spread recipes, sauces, desserts and more.

In this recipe, the addition of lemon to the mascarpone balances the sweet with some tart, creating a tangy flavor that's absolutely crave-able.   • 4 ounces cooked salmon (you could use canned salmon)
  • 2 1/2 tablespoons lemon juice (fresh is best)
  • 4 ounces mascarpone cheese
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
