This easy five-ingredient honey Dijon salmon spread recipe with lemon mascarpone cheese is my new favorite way to use cooked salmon. Mascarpone cheese is made from heavy cream and lemon juice, so it has a to-die-for buttery texture. It's ultra creamy and has a somewhat sweet flavor, making it ideal for sandwich spread recipes, sauces, desserts and more.

In this recipe, the addition of lemon to the mascarpone balances the sweet with some tart, creating a tangy flavor that's absolutely crave-able. Recipe Notes

• If you don't have leftover cooked salmon, you can use canned salmon for this recipe.

Here's how to make it:

1. Shred the salmon with a fork and put it into a small mixing bowl. Add the mascarpone, lemon juice, honey and mustard. Season with salt and pepper, if desired. Stir with a fork to combine.
