The budget-friendly ingredients bake for about 40 minutes, or until the casserole is a perfect golden brown.

Ingredients

  • 20 ounces (1 bag) shredded hash brown potatoes, not frozen (I used Simply Potatoes brand)
  • 1 pound ground turkey (or chicken or beef)
  • 2 tablespoons olive oil
  • 1 shallot, diced
  • 1 1/2 teaspoons minced garlic
  • 1 cup carrots, diced
  • 1 cup green bell pepper, diced
  • 1 cup low-fat ricotta cheese
  • 1 cup low-fat sour cream
  • 2 cups shredded reduced-fat cheddar cheese (divided)

  • Simply Potatoes brand hash browns are gluten-free. Not all brands of hash browns are gluten-free, so if you want this recipe to be gluten-free, be sure to check the label before you buy.
  • I used ground turkey for this recipe, but you also could use ground chicken or ground beef.
  • I used shallots in this recipe, but you could use onions instead.
  • I used carrots and green pepper, but you also could use peas or broccoli, and any other color of bell pepper.
  • I used sour cream in this recipe, but you also could use plain low-fat Greek yogurt.
  • I used ricotta cheese in this recipe, but you also could use a can of condensed cream of chicken or mushroom soup.

Here's how to make it:

  1. To a large skillet over medium heat, add the olive oil, shallots and garlic. Stir to combine.
  2. Add the carrots and green pepper. Sauté for about 3 minutes.
  3. Add the turkey. Sauté until cooked through and no longer pink, about 5 minutes.
  4. To a large mixing bowl, add the ricotta cheese and sour cream. Season with salt and pepper.
  5. Add the hash brown potatoes and stir to combine.
  6. Add 1 cup of the cheddar cheese and stir to combine.
  7. Add the turkey mixture to the hash brown mixture and stir to thoroughly combine.
  8. Spread the mixture in a 13x9-inch baking pan or casserole dish that's been sprayed with cooking spray. Ensure that the mixture is evenly distributed.
  9. Top the casserole with the remaining shredded cheddar cheese, ensuring it is evenly distributed.
  10. Bake the casserole in a preheated 350-degree F oven for about 40 minutes, or until heated through and a perfect golden brown. Allow to cool a few minutes before serving.
