Creamy Cauliflower Casserole Recipe Is Like Crustless Quiche But Better

Creamy vegetable casseroles have become a staple in our house. Ever since I made this easy, six-ingredient broccoli cheese casserole pie recipe, I've been on a mission to make more nutritious versions of the cheesy comfort food casseroles we all crave.

After the success of this cheesy cauliflower casserole pie recipe, which still may be my favorite recipe of the year (so far), I wanted to try a crustless version. Eliminating the crust helps reduce carbs and calories, which is good for health, but I didn't know how it would affect the taste.

I'm happy to report that this cauliflower casserole is absolutely delicious, even without the crust. In fact, this creamy gluten-free casserole recipe tastes like a crustless quiche but better. It's so easy and delicious!

This cheesy cauliflower recipe is oven-ready in less than 10 minutes and bakes up to golden perfection in about 30 minutes. Here is your simple shopping list for this vegetarian dinner recipe: fresh cauliflower, heavy cream or half and half, eggs, feta, cheddar and Parmesan cheeses, turmeric, paprika and Mediterranean seasoning.

The ingredients are incorporated then poured into a baking dish. You bake the casserole until it's golden on the outside, and solid but creamy on the inside.

Serve this cauliflower casserole as a vegetable side dish or as a vegetarian main course. Because it's similar to a crustless quiche, it works well for brunch or lunch or as a light dinner with your favorite protein. Yum!

Ingredients

  • 1 head of fresh cauliflower, chopped (about 4 cups)
  • 1 cup heavy cream or half and half
  • 4 eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup feta cheese, crumbled
  • 1/2 cup shredded Parmesan cheese
  • 1/3 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Mediterranean seasoning or Italian seasoning

Here's how to make it:

  1. Put chopped cauliflower in a microwave-safe bowl. Cover cauliflower with a wet paper towel. To steam the cauliflower, microwave it for about 5 minutes, or until crisp-tender.
  2. In a large mixing bowl, add the cream, eggs, cheeses and seasonings. Mix to combine. Season with salt and pepper, to taste.
  3. Add the steamed cauliflower to the mixture and stir until thoroughly incorporated.
  4. Pour the mixture into an 8x8-inch baking pan that's been sprayed with cooking spray.
  5. Bake in a preheated 375-degree F oven for about 30 minutes or until golden and firm.
  6. Remove from oven and allow to cool for at least 10 minutes before serving.
