Cheesy Cauliflower Casserole Pie Recipe: So Good It Will Leave You Speechless

You know how when you make something so good, you want everyone to try it? That's how I feel about this easy, cheesy cauliflower casserole pie recipe. As he was eating it, my husband could say nothing but "yum." Seeing him basically speechless with delight is why this vegetable dish is my absolute favorite recipe this year (so far)!

Last week, I made this easy, six-ingredient broccoli cheese casserole pie recipe that was a slice of broccoli cheese heaven. It was so good that it got me wondering how it would taste with cauliflower instead of broccoli. The answer is, AMAZING!

This cheesy cauliflower pie recipe is oven-ready in less than 10 minutes and uses a ready-made pie crust right out of the freezer. Because cauliflower has a very different taste and texture than broccoli, I made some modifications to this recipe that made the cauliflower dish shine even brighter, with additional cheddar and a savory Mediterranean flavor. Here is your short and simple shopping list for this vegetarian dinner recipe: fresh cauliflower, heavy cream or half and half, eggs, cheddar and Parmesan cheeses, turmeric, paprika, Mediterranean seasoning and a ready-made pie crust.

The ingredients are incorporated then poured into the unbaked pie crust. You bake the casserole pie until it's golden on the outside, and solid but creamy on the inside. You can serve this cauliflower casserole recipe as a vegetable side dish or a vegetarian main course. It's similar to quiche (but creamier), so it also works for brunch or lunch or as a light dinner with your favorite protein. I hope you love it as much as we do!

Ingredients

  • 1 ready-made pie crust, unbaked
  • 1 cup heavy cream or half and half
  • 3 eggs
  • 1 head of fresh cauliflower, chopped (about 4 cups)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup shredded Parmesan cheese
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon paprika
  • 1/2 teaspoon Mediterranean seasoning or Italian seasoning

  • Use a frozen or refrigerated pie crust, or your favorite homemade pie crust recipe.
  • Line your oven rack with aluminum foil in case of any overflow or spills.
  • To make this recipe gluten-free, use a gluten-free pie crust.
  • For a crust-less version, omit the pie crust and spray a baking pan with cooking spray instead.
  • For best results, allow to cool about 10 minutes before serving.
  • Store leftovers covered in the refrigerator for up to three days and reheat in the microwave or oven.

Here's how to make it:

  • Put chopped cauliflower in a microwave-safe bowl.
  • Cover with a wet paper towel. To steam the cauliflower, microwave it for about 5 minutes, or until crisp-tender.
  • In a large mixing bowl, add the cream, eggs, cheeses and seasonings. Mix to combine. Season with salt and pepper, to taste.
  • Add the steamed cauliflower to the mixture and stir until thoroughly incorporated.
  • Pour the mixture into the pie crust.
  • Bake in a preheated 375-degree F oven for 35 minutes or until golden and firm.
  • Remove from oven and allow to cool for at least 10 minutes before serving.
