Moist Apple Crumble Cake Recipe For Dessert, Breakfast or Brunch

Every fall I order boxes of apples to make into applesauce. Usually I jar more than 200 quarts of applesauce, but along the way I like to try to make other apple recipes and this apple crumble cake recipe is a big winner.

To make this easy apple cake for your family you will need butter, brown sugar, an egg, sour cream (a secret to the moistness!), vanilla yogurt (another secret!), vanilla extract, flour, cinnamon, baking soda, salt and fresh apples.

This moist apple cake isn't overly sweet and would be great with your morning coffee for breakfast or brunch. Or top it with vanilla ice cream like we did and serve it for a wonderful dessert!

  • 1/4 cup brown sugar
  • 1/4 cup all-purpose flour
  • 2 tablespoons melted butter
  • 1/2 teaspoon ground cinnamon

  • Instead of vanilla yogurt, you could use 1/4 cup plain yogurt plus 1 teaspoon vanilla extract.
  • Use whatever apples you enjoy for this cake. My favorite are Pink Lady and Fuji. 

Here's how to make it: 

  1. Grease and flour an 8-inch square baking dish. In a mixing bowl add softened butter and brown sugar and mix until light and fluffy. 
  2. Add the egg, sour cream, yogurt and vanilla and mix on low until all the ingredients are combined.
  3. Sift flour, cinnamon, baking soda and salt into the mixing bowl. Blend again until the batter is smooth. Gently add the diced apples and mix on low until they are combined into the batter. Pour out the batter into the greased and floured pan.
  4. In a small bowl combine the topping ingredients until they are crumbly. Sprinkle over the cake batter.
  5. Bake in a preheated 350-degree F oven for 35 to 40 minutes. Remove and serve warm with whipped cream or vanilla ice cream.
