This easy, seven-ingredient skillet chicken thighs recipe is a one-pan celebration of fall flavors. Here's your simple shopping list for this moist and juicy chicken dinner recipe: chicken thighs, olive oil, apple cider vinegar, sweet potatoes, oregano, paprika and garlic powder. You simmer everything in a skillet until it's done. How easy is that?
This gluten-free chicken recipe is a flavorful and nutritious (check out the health benefits of sweet potatoes) meal on its own, but you can serve it over rice or with a side of vegetables, or with your favorite side dishes. I served this low-sodium chicken dish over a Venezuelan arepa (cornmeal patty, see Recipe Notes) and it was dang delicious.

Ingredients
- 1 pound boneless/skinless chicken thighs (about 4 thighs)
- 2 1/2 tablespoons extra virgin olive oil
- 1 1/2 teaspoons apple cider vinegar
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1 teaspoon oregano
- 2 cups sweet potatoes, peeled and diced

Recipe Notes
- Garnish with cilantro or parsley, if desired.
- Serve over rice, arepas or on its own. I used Toast-It brand arepas, which are Venezuelan cornmeal patties. I watched the Latina female founders of Toast-It pitch their business to the sharks on Shark Tank and ordered right away; they are delicious.
- Store leftovers in an airtight container in the refrigerator.
Here's how to make it:
- To a large skillet over medium heat, add the olive oil and apple cider vinegar, and stir to combine. Add the chicken thighs. Season with salt and pepper, if desired. Sprinkle the seasonings over the chicken.
- Simmer over medium heat until chicken starts to cook through, about 5 minutes.
- Add the sweet potatoes to the pan. Stir to combine.
- Allow to simmer on medium-low heat, covered, for about 10 more minutes, or until desired doneness. Chicken is done when it reaches 165 degrees F on a food thermometer.
- Remove from heat and serve over rice or arepas, or with your favorite side dishes. Garnish with cilantro or parsley, if desired.
