Easy Spooky Spice Cakes Recipe for Halloween (or Day of the Dead)

A recipe for Spooky Spice Cakelets came with my Nordic Ware Skull Pan. All the ingredients were in my pantry or fridge, so they became my weekend baking therapy. These spooky, skull-shaped cakes delivered on taste and moistness. They were fun to eat and are a creepy addition to your Halloween menu or dessert table.

This cinnamony gingerbread snack cake recipe is simple to prepare and bakes up in 20 to 30 minutes. The aroma coming from the oven smells heavenly, and makes you forget about their spooky shape.

All you need to make these spice cakes is flour, baking powder, salt, cocoa powder, cinnamon, ginger, nutmeg, granulated sugar, brown sugar, butter, eggs, milk and vanilla extract. Serve these skull spice cakes as a snack for Halloween or even during The Day of the Dead celebrations coming up in November.

  • To add even more spookiness, serve the cakes with raspberry or strawberry jam (aka blood).
  • If you don't have skull pans, you can bake these in large muffin tins or ramekins.
  • I sprinkled some extra gingerbread spice into the pan before adding the batter. You could also do this with ground cinnamon. 

Here's how to make it: 

  1. Grease and flour the skull pans. Set aside. Whisk together the flour, baking powder, salt, cocoa powder and spices in a mixing bowl.
  2. With an electric mixer, cream the sugar and butter together until light and fluffy. Add the eggs, one at a time, then add the vanilla.
  3. Beat in half of the flour mixture and half of the milk, then repeat with remaining flour and milk.
  4. Spoon the batter evenly into the pan.
  5. Bake in a preheated 350-degree F oven for 20 to 30 minutes, or until a toothpick comes out clean. Cool in the pan for 10 minutes before removing to cool completely.
