Ingredients

  • 1 pound chicken breast, chopped
  • 2 tablespoons olive oil
  • 1/2 cup onion, diced
  • 3 teaspoons garlic, minced
  • 1 cup celery (leaves and stems), chopped
  • 1 cup broccoli, chopped
  • 2 cups potatoes, chopped
  • 1 teaspoon turmeric
  • 1 1/2 teaspoons paprika
  • 64 ounces chicken broth or bone broth
  • 1 can (14.5 ounces) diced tomatoes (with liquid)
  • 1 cup low-fat plain Greek yogurt
  • 1/2 cup milk of choice
  • 1 1/2 tablespoons lime juice
  • parsley or cilantro, for garnish (optional)

  • Feel free to add any vegetables you prefer, such as carrots or mushrooms.
  • I used marble potatoes, but you can use whichever potatoes you prefer.
  • I prefer to squeeze my own fresh lime juice, but you can use bottled in a pinch.
  • I used almond milk, but you can use your milk of choice.
  • Serve with warm bread, breadsticks or your favorite crackers, if desired.
  • Store the soup in an airtight container in the refrigerator. Reheat in the microwave or on the stovetop in a saucepot.
  • This soup freezes well – you may want to have some in reserve for a rainy day!

Here's how to make it:

  1. To a large soup pot or Dutch oven over medium heat, add the olive oil, onions and garlic. Stir to combine.
  2. Add the broccoli, celery and potatoes. Stir to combine.
  3. Add the chicken and the seasonings. Stir to combine. Stir fry until chicken is mostly cooked through, about 5 minutes.
  4. Add the chicken broth and diced tomatoes. Stir to combine. Cover and allow to simmer.
  5. To a mixing bowl, add the Greek yogurt, milk and lime juice. Stir to combine.
  6. Pour the Greek yogurt mixture into the soup pot. Stir to combine.
  7. Allow soup to simmer until all is cooked through and soft, about 20 minutes.
  8. Serve immediately in your favorite soup bowls and with a side of bread or crackers, if desired.
