Easy 5-Ingredient Honey Orange Roasted Beets Recipe: An Unexpected Burst of Flavor

Beets can be a delicious part of a healthy Mediterranean Diet. Beets may help lower cholesterol, reduce inflammation and increase heart health, among the other health benefits of beets. The challenge for some is the taste or texture of beets, so I've made it part of my mission to create a variety of yummy beet recipes.

My latest beet dish is this easy five-ingredient honey orange roasted beets recipe. The orange juice brings refreshing notes of citrus while the honey enhances the beets' sweetness. The result is a tender and tangy vegetable side dish that brings an unexpected burst of flavor and nutrition to dinner.

This nutritious, low-sodium baked beets recipe is simple to make and ready in about 45 minutes. Here's your short shopping list: fresh beets, olive oil, orange juice, honey and Mediterranean seasoning. Toss to coat then bake until tender.

Serve these tasty honey orange roasted beets as a healthy vegetarian and gluten-free side dish alongside your favorite proteins or grains. It adds a pretty pop of color to the plate, too!

Recipe Notes

  • I used a metal baking pan lined with aluminum foil, which makes for easy cleanup, but you also can use a casserole dish sprayed with cooking spray.
  • The bright color of beets can rub off on fingers, clothing or counters, so quick cleanup to avoid staining is helpful. I chopped my beets on a paper towel to avoid staining my cutting board.
  • If you don't have Mediterranean seasoning, you can use Italian or Greek seasoning (or your favorite seasoning blend).
  • I stirred the beets halfway through the baking time, but it's not absolutely necessary.
  • Store leftovers in a container in the refrigerator for up to three days. Reheat in the microwave.

Here's how to make it:

  1. In a large mixing bowl, add the olive oil, orange juice, honey and seasoning. Stir to combine.
  2. Add the beets to the mixing bowl and toss to coat beets in the mixture.
  3. Pour the beets into a casserole dish or baking pan in an even layer. Season with salt and pepper, to taste, if desired.
  4. Bake in a preheated 375-degree F oven. About halfway through the baking time (after about 15 minutes), remove pan from oven and stir beets to re-coat them in the mixture.
  5. Put them back into the oven to continue roasting for about 15 to 18 more minutes, or until crisp-tender.
