Quick & Easy Garlic Chive Scrambled Eggs Recipe Tastes Gourmet

If you like eggs but have grown tired of all the ways you cook them, try this garlic and chive scrambled egg recipe to make them fancy. My sister used to make these eggs for us as kids as a treat. They are quick, easy and the perfect breakfast or brunch recipe for busy mornings or lazy weekends.

These fluffy eggs are wonderful served with easy three-ingredient smoked salmon spread (recipe coming soon!) spread on a bagel, piled on toast or just as is. To make this scrambled egg recipe you'll need eggs, butter, fresh chives, fresh garlic or garlic powder, lemon juice and grated Parmesan cheese. Just a few simple ingredients takes those eggs to gourmet!

You could also serve these eggs with bacon, hash browns, breakfast sausage or fresh fruit

Ingredients 

  • 12 eggs
  • 1 stick (1/2 cup) salted butter
  • 1 tablespoon chopped fresh chives
  • 2 cloves chopped fresh garlic or 1 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1/4 cup grated Parmesan cheese

  • Don't have chives? Use chopped green onion tops. You could also use 1 teaspoon of dried chives. 
  • This recipe could easily be cut in half for smaller families. 

Here's how to make it: 

  1. Melt butter in a medium skillet over medium heat. Crack eggs over a large metal strainer set over a bowl. Whisk until eggs run through into bowl. Add remaining ingredients and whisk together.
  2. Once butter is melted and slightly bubbling, add the eggs. Stir gently with a rubber spatula as eggs start to set. Continue to move eggs around until cooked through. Serve hot.
