Fluffy Mayonnaise Eggs Recipe: This Mayoneggs Recipe Is From the 1970s by Donna John

A viral recipe gave me mixed emotions. Mayonnaise eggs? I was skeptical until my first bite. This mayonnaise egg recipe (aka mayoneggs) is creamy, fluffy and some of the best scrambled eggs I've ever made. 

This scrambled egg recipe first appeared as an advertisement for Best Foods mayonnaise in 1972. To make these fluffy mayonnaise eggs you will need just three simple ingredients. Here is your short shopping list: eggs, mayonnaise and butter. The eggs cook up in a skillet in about two to three minutes. They are light, fluffy and full of eggy goodness

The mayonnaise really did bring out the best in these eggs. Serve these mayoneggs for breakfast, brunch or as a protein-rich snack anytime during the day.

Ingredients

• 2 eggs
• 1 tablespoon mayonnaise
• 2 tablespoons butter

Recipe Notes

• I used Hellman's Real Mayonnaise, but you can use whatever type of mayo you like.

• For freshness, add some chopped fresh herbs. 

Here's how to make it:

1. Combine the eggs and mayonnaise in a small bowl. Season with salt and black pepper.
   
2. Whisk the eggs together with the mayonnaise.
   
3. Melt the butter in a nonstick skillet over medium heat.
   
4. Add the eggs and cook, stirring, until cooked through and fluffy.
   
5. Garnish with fresh herbs, if desired.
