You know what's awesome? When you eat something that tastes so rich and creamy, you think it can't possibly be healthy – then you find out it actually is! That's exactly the case with this decadent avocado salad dressing recipe. It's so creamy and flavorful, you'll think you're cheating on your diet when it's actually good for you.

The avocado is a fruit that provides many important nutrients. Avocados are loaded with healthy fats that help you feel fuller longer, which may help manage your eating and body weight. Avocados help lower cholesterol and blood pressure, reducing your risk of developing cardiovascular disease. They may even help improve brain function and digestive health.

Although it's amazing, guacamole isn't the only way to enjoy avocados. My latest avocado fave is this easy and delicious avocado salad dressing recipe. It's so luscious that you can even use it as a vegetarian sandwich spread or a vegetable dip.

Your shopping list for this ultra creamy avocado sauce recipe is short and sweet: an avocado, olive oil, fresh lemon juice, garlic, Mediterranean or Italian seasoning and water. You blend the ingredients until you reach your desired consistency, then in 5 minutes, you're ready to drizzle it onto your favorite salad or spread it onto your favorite breads or vegetables.

Recipe Notes

  • Fresh lemon juice is best, but If you don't have a fresh lemon, you can use bottled lemon juice.
  • If you don't have fresh garlic or minced garlic in a jar, you can use 1/4 to 1/2 teaspoon of garlic powder.
  • Start with 1 cup of water and see how thick the dressing is. If it's too thick, add additional water, 1/4 cup at a time, until you reach the desired consistency. You can store the leftover dressing in an airtight container in the refrigerator for up to five days.

Here's how you make it:

  1. Put all the ingredients except the water into a blender. Add salt and pepper to taste, if desired.
  2. Blend until smooth. Stop the blender and add the water slowly. Blend until smooth, adding additional water if needed until you reach the desired consistency.
  3. Serve over your favorite salads or use as a dipping sauce for vegetables or as a sandwich or cracker spread.
