Refreshing Tomato Cucumber Celery Salad Recipe Is Farm-to-Table At Its Best

I'm having a lot of fun with my backyard garden. I planted a few new vegetables this year and I'm happy that they're thriving. The celery plant I grew from a stalk is producing plenty of celery and leaves that I'm using in a variety of recipes, and my vine-ripe tomatoes and cucumbers are at peak freshness right now.

Those three farm-to-table ingredients came together nicely in this refreshing tomato, cucumber and celery salad recipe that I made for lunch the other day. I topped this simple salad with shredded Parmesan cheese and a creamy avocado salad dressing that added a savory garlic and lemon flavor that was almost addictive. You can use other salad dressings on top of this easy vegetarian recipe if you prefer. See below for an easy, non-creamy alternative. However you dress this simple vegetable side dish, it's farm-to-table eating at its best!

  • 1 cup celery (including leaves), chopped
  • 1 cup cucumber, peeled, seeded and sliced
  • 1 cup tomatoes, sliced
  • 1/4 cup shredded Parmesan cheese

Recipe Notes

  • If you prefer a non-creamy dressing for this salad, you can make a simple dressing with 4 teaspoons of lemon juice, 2 teaspoons of olive oil and 1 teaspoon of Mediterranean or Italian seasoning. Whisk to blend then drizzle over the salad.
  • I prefer to squeeze my own lemon juice, but in a pinch, you can use bottled lemon juice.
  • You can store any leftover vegetables in the crisper drawer of your refrigerator.

Here's how to make it:

  1. In a large bowl, combine the celery, cucumber and tomatoes and toss to combine.
  2. If making the creamy avocado salad dressing, follow the instructions here. If making the simple fresh lemon dressing, combine all ingredients in a small bowl and whisk to blend.
  3. You can dress the entire salad with the dressing you prefer, or you can serve in individual bowls and spoon the dressing on top according to each person's preferences.
  4. Before serving, sprinkle the Parmesan cheese over the top of the salad. Serve immediately.
