No-Mess Baked Cajun Shrimp Boil Recipe With Corn, Potatoes & Sausage

Shrimp boils and summer just go together! Down south, when we can't get crawfish because it's out of season, we turn to shrimp. There's nothing like a pile of spicy shrimp, sausage, potatoes and corn in front of you – and a bunch of napkins. But boiling shrimp outside does take some time and energy. What if I told you that you can have a no-mess shrimp boil without getting out in the heat or lots of equipment? Well, you can with this easy baked Cajun shrimp recipe!

You don't need a big propane-fueled cooking pot for this seafood dinner. All you need are two baking sheets, a soup pot and the following ingredients: potatoes, corn on the cob, an onion, shrimp, sausage, butter, garlic, Old Bay seasoning and dried Italian seasoning. The potatoes, corn and onion are boiled on the stove until tender, then join the shrimp and sausage on baking sheets. Everything is coated in butter seasoned with the Old Bay and Italian seasoning. Bake for about 15 minutes. No mess, great taste and easy cleanup.

Serve this no-mess baked Cajun shrimp boil at your next get-together or just for dinner on Monday night. It's that easy. If you like to dip your shrimp, try creamy Cajun dipping sauce, remoulade sauce, cocktail sauce or tater sauce.

Ingredients

  • 2 pounds small Yukon gold, red or white potatoes
  • 6 ears corn on the cob, cut into 2- to 3-inch pieces
  • 1 onion, quartered
  • 2 pounds shrimp, peeled and deveined
  • 24 ounces (2 packages) andouille sausage or smoked sausage, sliced
  • 1 stick (1/2 cup) butter
  • 3 cloves garlic, minced
  • 2 tablespoons Old Bay seasoning
  • 3 tablespoons dried Italian seasoning

  • This recipe can easily be cut in half.
  • Add other ingredients to this shrimp boil! Mushrooms, eggs and brussels sprouts are popular additions to shrimp and crawfish boils.
  • You can omit the dried Italian seasoning and just use Old Bay. Another option is to use dried parsley flakes. Like it hot? Add some ground cayenne pepper. 

Here's how to make it: 

  1. Cook the potatoes in boiling, salted water until tender, about 10 minutes. Add the corn and onion during the last 5 minutes of cooking time. Drain. 
  2. Spread the potatoes, onion and corn onto two oiled baking sheets. Add the shrimp and sausage. 
  3. In a saucepot, heat the butter, garlic, Old Bay and Italian seasoning over low heat until melted and combined. Pour the mixture over the potatoes, onion, corn, shrimp and sausage. Toss to coat. 
  4. Bake in a preheated 400-degree F oven for about 15 minutes.
