Hearty Ground Turkey Taco Soup Recipe Is an Easy Family Favorite

One of the recipes I get the most requests for from my family is my easy taco soup recipe. Because it’s a family favorite, I’m constantly trying to perfect the soup recipe, and I try to pack a lot of nutrition into it, even though some of the ingredients come from my pantry.

The reason why this savory soup is a favorite in our house is because it’s fast and flavorful. This quick taco soup recipe includes lean ground turkey for protein and tri-color bell peppers, which are loaded with nutrients. Bell peppers contain lots of vitamin C (more than an orange!), an essential nutrient that helps the body repair tissues and heal wounds, among other health benefits.

Your shopping list for this tasty taco soup also includes garlic, olive oil, diced tomatoes, black beans, kidney beans, taco seasoning, chili powder, onion powder and tomato sauce. Such an easy, delicious dinner, especially when you serve it with your favorite toppings!

Ingredients

  • 1 medium green pepper, diced
  • 1 medium yellow pepper, diced
  • 1 medium red pepper, diced
  • 1 tablespoon minced garlic
  • 3 tablespoons extra virgin olive oil
  • 1 pound lean ground turkey
  • 2 cans (15 ounces each) diced tomatoes, with liquid
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) light red kidney beans, rinsed and drained
  • 1 packet (1 ounce) taco seasoning mix
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 can (15 ounces) tomato sauce
  • sour cream, shredded cheese, guacamole or your other favorite toppings (optional)

Recipe Notes

  • I use ground turkey in this recipe because it’s leaner, but you also can use ground beef.
  • You can swap out the onion powder for 1/2 cup diced onion, if you prefer.
  • You can add more or less chili powder, to taste.
  • Refrigerate leftovers in an airtight container in the fridge for up to three days.

Here’s how to make it:

  1. In a large sauté pan or soup pot over medium heat, add the olive oil, garlic and diced peppers. Stir to combine and sauté for 2 to 3 minutes. Add ground turkey and sauté until it’s no longer pink, about 10 minutes.
  2. Add the tomato sauce, diced tomatoes, beans and seasonings. Stir to combine. Simmer for 10 minutes or until cooked through.
  3. Serve over rice or pasta or with tortilla chips on the side. Top with sour cream, shredded cheese, guacamole or your favorite toppings, if desired.
