Copycat Napa Chicken Salad Recipe Tastes Like That Sandwich From Panera

My mother-in-law could not stop talking about how much she enjoyed Panera Bread's chicken salad. Chicken salad is one of my favorite things, so I had to try it. After devouring my sandwich, I knew I needed a copycat recipe to make at home for me and to pack some to deliver to her and my father-in-law.

This fresh, creamy Napa chicken salad recipe tastes just like what I enjoyed at the restaurant. Here is your shopping list for this homemade chicken salad recipe: chopped cooked chicken breast, sliced almonds, grapes, celery, mayonnaise, lemon juice (fresh is best), honey, apple cider vinegar, dry mustard, onion powder, dried rosemary and dried basil. The ingredients are stirred together and it's ready to be eaten for lunch or dinner.

To make a sandwich like the restaurant, serve on sourdough bread with sliced tomatoes and lettuce. You can also pile it on salad greens or serve it with crackers (I like my chicken salad with potato chips).

  • 3 - 4 cups cooked chopped chicken breast
  • 1/2 cup sliced almonds, toasted
  • 1/2 cup quartered seedless red grapes
  • 1/3 cup diced celery

  • You can use a rotisserie chicken, leftover chicken or cook two to three chicken breasts, cool and chop.
  • Rosemary is a strong flavor. If you're not a fan of rosemary, leave it out.
  • Store the leftover chicken salad in an airtight container in the fridge.

Here's how to make it: 

  1. Mix together the chicken, almonds, grapes and celery in a bowl.
  2. In a small bowl, stir together all the dressing ingredients. Season with salt and black pepper. 
  3. Add the dressing to the chicken and stir to coat. Taste and add more salt and pepper, if needed.
