The Best Lemon Oatmeal Cookies Recipe for Refreshing Summer Snacking

Oatmeal cookies and lemon cookies are always fan favorites. But what if you combine the two? Yep, we did it! This easy oatmeal lemon cookies recipe is the best of both cookie worlds. You get the texture from the oatmeal, and the light refreshing twang from the lemon zest and juice. Perfect!

For this easy lemon oatmeal cookies recipe you'll need butter, granulated sugar, eggs, lemon zest, lemon juice, flour, quick-cooking oats, baking powder and a pinch of salt. The ingredients are mixed together to create a dough, then refrigerated for at least one hour to firm up. This step is important because when at room temperature, the dough is a bit too soft to handle. The cookies are baked for about eight minutes and then cooled.

Serve these easy lemon cookies with oatmeal for a sweet snack or as a light dessert. Store any leftover cookies in an airtight container so they stay fresh.

  1. Cream together the butter and sugar until fluffy. Add the eggs, lemon zest and lemon juice. 
  2. In another bowl, whisk together the flour, oats, baking powder and salt. Add the dry ingredients to the wet ingredients. Refrigerate the dough for about 1 hour. 
  3. Shape the dough into balls and place on parchment paper-covered baking sheets. Use a glass drinking cup to gently flatten the cookies. (If the dough sticks, spray the bottom of the glass with nonstick cooking spray.)
  4. Bake in a preheated 375-degree F oven for about 6 to 8 minutes or until lightly browned. Remove to cool.
