You can whip up a batch of these refreshing cookies for a simple dessert anytime you need some baking therapy. Here's what you need: butter, sugar, lemon zest, lemon juice, an egg, flour, baking soda and dash of salt. The additional sugar for rolling is optional.
These cookies make a sweet snack anytime during the day. Serve them with a cold cup of milk or a hot cup of coffee or tea. This is a perfect Easter (or anytime) dessert, just like Grandma used to make!

Ingredients
- 1 cup (2 sticks) butter, at room temperature
- 1 1/2 cups sugar
- 3 1/2 tablespoons lemon zest
- 2 tablespoons lemon juice
- 1 egg
- 3 cups flour
- 1 teaspoon baking soda
- dash of salt
- 1/4 cup sugar, for rolling (optional)
Here's how to make it:
- In a large mixing bowl, beat the butter and sugar together with an electric mixer until fluffy, about 2 minutes
- Add the lemon zest, lemon juice and egg. Beat to combine.
- Combine the flour, baking soda and salt in a large mixing bowl. (To make these cookies gluten-free, use gluten-free flour.)
- Stir the dry ingredients into the wet ingredients. Refrigerate the dough for 30 minutes.
- Put the 1/4 cup sugar into a shallow bowl (if using).
- Form the dough into balls. (The number of cookies will depend on how much batter you use for each cookie.) Roll the balls into the sugar, if using, then place on parchment paper-lined cookie sheets.
- Bake in a preheated 350-degree F oven for about 10 to 12 minutes, or until the edges are very lightly browned. Cool on the cookie sheets for a few minutes, then remove to cool completely. Garnish with additional lemon zest, if desired. Store cookies in an airtight container.
