Coconut Rice Krispies Treats Recipe: A Marshmallow Cereal Bar for Coconut Lovers by Donna John

Rice Krispies Treats will never go out of style. The original recipe for this ooey, gooey sweet marshmallow cereal bar is a classic. But sometimes you can add a little something something to a classic recipe and make it ... dare I say it? ... better. This coconut Rice Krispies Treats recipe is irresistible if you are a coconut lover. It's definitely a dessert recipe you need to try.
The cereal bars are made with butter, marshmallows and puffed rice cereal, just like the basic Rice Krispies Treats recipe. But what happens next takes them over the top. More marshmallows are stirred in (they are not melted with the butter) along with shredded coconut. Amazing!
You can use sweetened coconut or unsweetened coconut, depending on how sweet you want the Rice Krispies Treats. If you wanted to fancy them up, drizzle the tops with some melted chocolate and then sprinkle with more coconut. Serve these puffed cereal treats for dessert or as a sweet snack any time.

Ingredients
- 6 tablespoons butter
- 8 cups miniature marshmallows
- 6 cups puffed rice cereal
- 2 cups marshmallows
- 1 1/2 cups sweetened shredded coconut
Here's how to make it:
- Melt the butter in a large pot over medium heat. Add the 8 cups of marshmallows and stir until melted.
- Remove the pot from the heat and stir in the cereal until combined.
- Stir in the additional 2 cups of marshmallows and the coconut. Pour the mixture into a 13x9-inch buttered pan. Press with a buttered spatula to flatten. Let the treats cool before cutting into pieces.
