Skinny Gluten-free Cauliflower Garlic Bread Recipe for the Healthy Win

Who doesn't love garlic bread? But when you're trying to eat healthier, bread made with white flour and having very little nutritional value may not be the best choice. This skinny cauliflower garlic bread recipe is gluten-free and made with healthy cauliflower. So moist, delicious and healthier than many bread recipes.

The dough is a mixture of riced cauliflower, eggs, almond flour, baking powder, butter, garlic, thyme and parsley. The egg whites are whipped until stiff peaks form before being folded in, creating a lighter loaf of bread. Be sure to fold the ingredients in gently so you don't deflate the whipped egg whites. 

Serve this skinny bread recipe as a snack or side dish with your favorite protein. Store the uneaten garlic bread loaf in an airtight container on the counter.

Ingredients

  • 3 cups riced cauliflower 
  • 6 eggs (divided)
  • 1 1/4 cups almond flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 6 tablespoons butter, melted
  • 2 cloves garlic, minced
  • 1 tablespoon dried thyme
  • 1 tablespoon chopped parsley
  • optional toppings: sesame seeds, Italian seasoning, crushed red pepper flakes, everything bagel seasoning, etc.

Here's how to make it: 

  1. In a bowl, microwave cauliflower for 3 to 4 minutes or until soft. Let it cool then transfer to a kitchen towel and wring out all the water.
  2. Separate egg yolks from the whites. In a mixing bowl, beat egg whites until stiff peaks form. Set aside.
  3. In a medium bowl, whisk together almond flour, baking powder, salt, egg yolks, melted butter, garlic and 1/4 of the whipped egg whites. Stir until well combined. 
  4. Add the cauliflower. 
  5. Fold in remaining egg whites until all incorporated. Fold in thyme and parsley. Be gentle so the mixture stays fluffy. Transfer the batter to a 9x5-inch loaf pan that has been lined with parchment paper. 
  6. Bake in a preheated 350-degree F oven for about 45 to 50 minutes, or until the top is golden. Let the loaf cool completely before slicing.
