Grandma's Broiled Tomatoes Recipe Has a Surprising Ingredient Hidden Under the Cheese

Broiled Parmesan tomatoes are one of my favorite side dishes to make. They are quick, fresh and go so well with so many dishes. A friend of mine told me about a broiled tomato recipe her grandma made that she grew up eating. Her grandma not only put cheese on top of her tomatoes before broiling, but also ... wait for it ... mayonnaise. Yep, I was intrigued because grandmas know what they're doing in the kitchen!

This broiled tomato recipe is just plain old-fashioned goodness. Large tomatoes are cut in half, seasoned with salt, pepper and basil, then spread with mayonnaise and sprinkled with freshly grated Parmesan cheese and mozzarella. After a quick trip under the broiler, they are soft, juicy, cheesy and melt in your mouth.

Serve this baked tomato dish with chicken,pork, beef or seafood. You could even serve them whole or chopped up over pasta for a vegetarian dinner. This recipe makes two servings (one half per person), but it can easily be doubled or tripled for families.

Ingredients 

  • 1 large tomato, cut in half
  • 1/4 teaspoon dried basil (optional)
  • 2 teaspoons mayonnaise 
  • 2 tablespoons freshly grated Parmesan
  • 2 tablespoons grated mozzarella

Here's how to make it: 

  1. Put the tomato halves into a baking dish. Season with salt and pepper, to taste, and dried basil. 
  2. Spread each half with 1 teaspoon of the mayonnaise. 
  3. Top each half with 1 tablespoon of Parmesan and 1 tablespoon of mozzarella. 
  4. Broil for about 6 to 7 minutes or until tomatoes have softened a bit and cheese has melted.
